One that I do like are salads. Any kind of salad you can think of: green salad, chicken salad, tuna salad, steak salad, fruit salad, CAESAR salad (my fave)….do you see the direction I’m going?
I have missed some of the creamier salad dressings in our Paleo lifestyle, though. Until now. I give you….ta da! Ranch Dressing! This is even faster than making the dry mix of it. Remember how it used to be? Buy the little packet of dry mix and then try to remember to buy buttermilk that the instructions call for. Because, really? Who just drinks buttermilk for the hell of it? Well, my mom did for one. It used to gag my brother and I watching her drink that stuff. And she would add pepper to it before drinking it. Still gives me shivers just thinking about. I will give kudos, however, to the Hidden Valley Ranch folks for coming up with this salad taste treat. Millions of us love it. Bazillion of kids love it to dip any nasty vegetable into to eat.
This is so very simple…
This is all that you will need: apple cider vinegar, UNsweetened coconut milk, paleo mayonaise, garlic, and dill, either fresh or dry.
When you open the can of coconut milk, make sure that you whisk it together. While in the can, the fat and the liquid separate. You need them combined to get that great taste. Chop/mash one clove of garlic into a paste. You can do that by sprinkling a little bit of salt onto the chopped garlic and then mash it with a fork. But if you like the bite into a little bit of garlic, forgo the mashing and just add the minced garlic. I have used both fresh dill or the dry dill…they taste great either way.
Combine the 1/2 cup mayo with the 1/2 cup coconut milk. Then add the garlic, salt, pepper, apple cider vinegar and dill weed. Store in the refrigerator. It will thicken up as it chills; all you need to do is stir it a bit with a fork and it becomes pourable. The expiration date of the egg you used in the paleo mayo will also be the expiration date of the salad dressing. Please make sure you note that on the container.

Paleo Ranch Dressing with ingredients you can pronounce!
- 1/2 cup paleo mayo
- 1/2 cup unsweetened coconut milk
- 1/2 t apple cider vinegar
- 1/4 t salt
- 1/4 t pepper
- 2 T either chopped fresh dill or dry dill weed
- 1 clove garlic, minced or made into a paste
Mix all together and enjoy!
